About the recipe
Am I the only one already messed up by the time change? This also means SPRING IS HERE ! I made strawberry shortcake baked oatmeal to celebrate . Not only it’s delicious, but it’s also really easy to make. Enjoy it for breakfast, as a snack or as a dessert!

These baked oatmeal recipes all over TikTok. Thing is, they all included bananas, which wouldn’t fit the flavour profile of this dish. I replaced the banana with an egg, giving this cake a fluffy texture.


The steps
These baked oatmeal are super quick and only use a blender. I used my Magic Bullet to do so and the result was phenomenal.
When you’ll be done blending your ingredients, you might find it to not be thick enough. Don’t worry! The egg and baking powder will do their job while it’s baking.
The recipes also all required the use of an oven. When developing this recipe, I wanted to make sure it could also quickly be made in the microwave. Of course, the texture is slightly different in the microwave, but it takes less than 2 minutes to bake it in there! I used a tiny counter oven to make the oven-baked version. Not only it saved me the time it would’ve taken to preheat the oven, but it’s also more energy efficient.

Recipe variations
You can leave out the almond extract if you don’t have it, but it’s my favourite extract to use! It gives such a delicate flavour to the oatmeal.
I also topped it with a cream cheese frosting. You can leave it out if you wish.
I’d be curious to see this recipe made with other fruits: raspberries, blueberries, maybe add a crumble on top?

Strawberry shortcake baked oatmeal
Ingredients
- ½ cup quick oats
- ¼ cup milk
- 1 tbsp maple syrup
- ½ tsp vanilla extract
- 1 tsp baking powder
- 3 strawberries diced
- 1 tbsp white chocolate chips
- 1 tbsp sliced almonds
- 1 egg
Cream cheese frosting
- 1 tbsp cream cheese
- 1 tbsp milk
- 1 tbsp white chocolate chips
Instructions
- Blend all the ingredients for the oatmeal until smooth.
- Pour in an oven-safe dish.
- Add diced strawberries, white chocolate chips and sliced almonds.
- Bake at 350°F for 25 minutes, or in the microwave for 2 minutes
- Melt ingredients for the cream cheese drizzle in the microwave. Mix. Drizzle on your oatmeal cake.
